2023 Estate Syrah – Indigène & Slow Roasted Pork Shoulder

Our 2023 Indigène Syrah is a pure expression of the Sta. Rita Hills. It shows cold-climate intensity balanced by natural elegance. Fermented with native yeasts, it is dark and refined, with notes of violet, cracked pepper, and blue fruit over a stony core.

This wine is both wild and poised, a reflection of the land and the patient farming that shapes it.

    The Recipe

A simple, comforting dish that lets the wine shine. The slow roast brings out deep, savory flavors that echo the wine’s structure and spice. Pour yourself a generous glass of our Indigène Syrah, and take your time…

    Ingredients

    • 1 bone-in pork shoulder (about 4 lbs)
    • Olive oil
    • Kosher salt and freshly ground black pepper
    • 4 cloves garlic, crushed
    • 2 tbsp fresh rosemary, finely chopped
    • 2 tbsp fresh thyme leaves
    • ½ cup red wine

    Directions

    1. Preheat the oven to 300°F.
    2. Rub the pork shoulder with olive oil, salt, pepper, garlic, and herbs until evenly coated
    3. Place in a heavy roasting pan and pour a splash of red wine into the base.
    4. Cover and roast for 4 to 5 hours, until the meat is tender and pulls apart easily.
    5. Spoon the pan juices over the top before serving.

Pro Tip: We like using the Traeger for this one. The gentle wood smoke adds another layer of depth to the pairing. If you’re using a Traeger, set it to 300°F and cook for about 4 to 5 hours, keeping the lid closed as much as possible. The shoulder is ready when it pulls apart easily with a fork.
