The Recipe

Ingredients
- 1 bone-in pork shoulder (about 4 lbs)
- Olive oil
- Kosher salt and freshly ground black pepper
- 4 cloves garlic, crushed
- 2 tbsp fresh rosemary, finely chopped
- 2 tbsp fresh thyme leaves
- ½ cup red wine
Directions
- Preheat the oven to 300°F.
- Rub the pork shoulder with olive oil, salt, pepper, garlic, and herbs until evenly coated
- Place in a heavy roasting pan and pour a splash of red wine into the base.
- Cover and roast for 4 to 5 hours, until the meat is tender and pulls apart easily.
- Spoon the pan juices over the top before serving.
Pro Tip: We like using the Traeger for this one. The gentle wood smoke adds another layer of depth to the pairing. If you’re using a Traeger, set it to 300°F and cook for about 4 to 5 hours, keeping the lid closed as much as possible. The shoulder is ready when it pulls apart easily with a fork.
